These easy, mouthwatering Sriracha Mayo Marinated Grilled Lamb Chops are one of my favorite recipes for summer entertaining! They look and sound impressive, but they take less than 20 minutes of total work aside from the marinating time.

When the weather is nice we love to grill outside for dinner. Some of our other favorites are Easy Grilled Shrimp Skewers, Grilled Flank Steak with Mushrooms, and Perfect Grilled Pork Chops with Sweet BBQ Pork Rub.

When it comes to summer entertaining, grilling and eating al fresco is always at the top of our list. We don't have an outdoor dining table yet, although Paul is working on building one for us in his workshop (aka our garage), so for now we carry out our kitchen table to the back patio and use that. It feels ridiculous, but also special and fun, so we keep doing it. We feel so lucky to live in a place where our evenings are almost always mild enough to enjoy eating outside and now that our backyard landscaping project is done, we especially enjoy outdoor entertaining.

We had my friend Jana and her family over the other night and took pictures of our casual backyard cookout. Jana helps me out with some of the behind-the-scenes stuff on the blog and we also work together with the teenage young women at church. I seriously don't know what I would do without her. Plus, our girls and husbands are friends, so we invite them over often, especially when I know I'm going to be taking pictures of what we are about to eat and I need someone understanding about my slightly bizarre but super fun job.

I loved how everything turned out and all the flavors came together. And all of it was simple enough for easy entertaining.

Lamb is one of my favorite proteins to serve when we have guests. Not only is it incredibly delicious and can be prepared any number of ways all sorts of seasonings, but it's different enough to be special since not everybody makes it. But they really should!

While I love pretty much every cut of lamb, I have to admit that rack of lamb and lamb rib chops are my favorite. I make rosemary garlic oven roasted rack of lamb for holidays and Sunday dinners. The sriracha mayo grilled lamb chops I'm sharing today are easy enough though that I will do them on weeknights or for parties because they grill up in less than 10 minutes and you can double or triple the recipe depending on how many people you are serving.

I used a rack of local American lamb that I got from our butcher. He did all the work of frenching the lamb rack for me, which is just a technique of removing some of the fat from around the bones and rubbing them clean with a towel, but I've done it at home myself before. This is a helpful tutorial showing you how to french a rack of lamb if you are interested in doing it yourself. Then I just sliced between each rib to cut my own lamb chops with the bone on.

You can use lamb loin chops and those will work just as well with this recipe, just increase the grilling time by 2-3 minutes per side since lamb loin chops take a little longer to cook than lamb rib chops.

Sriracha Mayo Marinade

The marinade for these easy lamb chops is a delightful blend of spicy and sweet with sriracha and honey mixed with a base of mayo and some chopped fresh mint leaves. The lamb can marinate for up to 24 hours.

How to Cook Lamb Rib Chops on the Grill

  1. Preheat the grill:  Let the lamb chops come to room temperature on the counter for 30 minutes while you preheat the grill to medium-high heat.
  2. Grill over direct heat:  I like to grill lamb chops directly over the flame by placing them diagonally across the grill grates and cooking for 3-4 minutes on one side without moving until there are nice grill marks. Then flip and grill for another 3-4 minutes on the other side until medium-rare.
  3. Remove and let rest:  Like most any grilled meat, the juices in the lamb chops need to redistribute by letting the meat rest for 5-10 minutes before serving.

How do you know when lamb chops are done?

You can tell if lamb chops are done by using an instant read digital meat thermometer (affiliate link) to test for doneness. I always shoot for medium-rare to medium with my grilled lamb chops, which is around 130 degrees F while on the grill. Keep in mind that the temperature will continue to rise by about 5 degrees after you remove them from the grill while resting.

That said, lamb chops are so quick to grill that if you follow the time guidelines of 3-4 minutes per side for lamb rib chops, your meat should be perfectly cooked every time. To be honest, lamb chops are one cut of meat that I almost never bother to check with a meat thermometer. You can test to see if your lamb chops are done by pressing firmly on the meaty part of the lamb chop (not on the bone). If the meat gives a bit but is somewhat firm, it's probably medium-rare. The firmer the feel, the more well-done the lamb chops are.

Ingredients
  

  • 1 lamb rack frenched and cut into individual chops
  • 3 Tablespoons mayonnaise
  • 3 Tablespoons honey
  • 3 Tablespoons finely chopped fresh mint leaves
  • 2 Tablespoons Sriracha sauce
  • 2 Tablespoons Dijon mustard

Instructions
 

  • Combine the marinade ingredients in a large ziploc bag. Add the lamb chops and marinade for at least 2 hours or up to 24 hours.
  • Preheat grill to medium-high heat. Remove lamb chops from the marinade and grill for about 4 minutes on each side. Remove from heat and let rest for 5 minutes before serving.
