In a large mixing bowl, stir together the oats, almonds, brown sugar, cinnamon, and salt.
In a small bowl, stir the melted butter, honey, vanilla, and egg white.
Drizzle the egg mixture over the oat mixture, stirring together until well-combined.
Pour the granola out onto a baking sheet and spread it into a thin, even layer. Bake for 30-35 minutes, rotating the pan once halfway through until the granola is golden and crispy, and the almonds are lightly toasted.
Remove the pan from the oven and let the granola cool completely before storing.
