Orange Glazed Carrot Cookies

What You'll Need:

Grated Carrots Large Egg Salted Butter Granulated Sugar Pure Vanilla Extract All-Purpose Flour Baking Powder Salt Chopped Walnuts or Pecans   (optional) Powdered Sugar Orange

Grate the carrots and add them to a steamer basket over simmering water. Cover and steam for 5-7 minutes until the carrots have softened. Transfer the softened carrots to plate and spread them out to cool.

Grab a large mixing bowl and cream the butter and sugar together until creamy, soft, and light. Add the cooled carrots, egg, and vanilla extract.

Mix well, stopping to scrape the bottom and sides of the bowl.

Next add the flour, baking soda, and salt to the carrot cookie dough.

If you are using nuts, add them in at this point!

Scoop dough onto a baking sheet. Bake for 10 minutes or until slightly browned. Cool on the pan for 5-10 minutes. Transfer to a cooling rack over a baking sheet.

Whisk the melted butter, powdered sugar, orange zest, and 2-3 tablespoons of fresh orange juice in a medium mixing bowl until combined.

You will want the cookies still warm to glaze. Spoon the glaze onto the cookies or carefully dip the tops of the cookies into the glaze. Let the cookies set for 30-60 minutes for the glaze to harden before enjoying.

They are perfect all year round, but especially for Easter and Spring with the carrots and fresh orange flavors!
