Belgian Waffles

These Belgian waffles are crisp on the outside and soft on the inside - perfect for topping with nutella or syrup or your favorite fruit with fresh whipped cream.  Raspberries are my favorite, but strawberries, blueberries, bananas, or even cinnamon apples are delicious as well.  These are perfect for a breakfast or brunch because guests can top their waffle however they want!

Ingredients

  • 2 cups flour
  • ¾ cup sugar
  • 3 ½ teaspoons baking powder
  • 2 large eggs, separated
  • 1 ½ cups milk
  • 1 cup butter, melted
  • 1 teaspoon vanilla

Instructions

  • Combine the flour, sugar and baking powder in a large bowl. In a separate bowl, lightly beat the egg yolks, then add the milk, melted butter and vanilla and mix well. Add the wet ingredients to the dry ingredients and stir just until combined.
  • In another bowl, beat the egg whites with an electric hand mixer until stiff peaks begin to form. Gently fold the stiff egg whites into the batter. It's okay if there are still some streaks of egg white showing.
  • Cook in a preheated Belgian waffle iron until golden brown. Top with freshly whipped sweet cream, berries, and if you are really going for it - some nutella.

Notes

These Belgian waffles are wonderful because you can top them with whatever you want, really.  Raspberries are my favorite, but strawberries, blueberries, bananas, or even cinnamon apples are delicious as well.
