Cinnamon Toast Crunch Bars
Gooey, crunchy, and full of our favorite breakfast cereal treat, these Cinnamon Toast Crunch Bars are basically just rice krispies treats made with a different kind of cereal, but somehow they manage to be something so much more!

- ½ cup salted butter (1 stick)
- 2 (12-ounce) bags marshmallows
- 1 teaspoon vanilla extract
- 8 cups Cinnamon Toast Crunch cereal (about a 12.2-ounce box)
- ½ (10-ounce) bag mini marshmallows
Generously spray a 9x13-inch pan with baking spray. Set aside.
Melt butter in a large pot over medium-low heat. Add large marshmallows and cook, stirring frequently, until melted and smooth.
Remove from heat and stir in the vanilla extract. Add cereal and mini marshmallows, stirring to coat. Pour into prepared pan and gently press into an even layer. Let cool completely to set up before slicing into bars.
- Storage: These keep well in an airtight container on the counter for up to 1 week. You can also freeze them for up to 3 months, then thaw before enjoying.
- Spray your hands: You can spray your hands with cooking spray to help keep the bars from sticking too much when you press them into the pan.
- Microwave method: If you prefer not to use the stovetop, you can melt the butter and marshmallows in the microwave by heating for 60 seconds, then stirring and heating for an addition 15-30 seconds as needed until the mixture is smooth.
