Orange Pomegranate Salad

Fresh and juicy with a zesty punch, this Orange Pomegranate Salad with Orange Vinaigrette is an easy side salad to throw together! It's prefect for all occasions, from summer BBQs to Thanksgiving, when pomegranates and oranges are in season. You'll want to add the homemade orange vinaigrette to all of your salads!

Ingredients

Orange Vinaigrette

  • ¼ cup olive oil
  • 2 Tablespoons apple cider vinegar
  • ¼ cup freshly squeezed orange juice
  • 1 Tablespoon orange zest
  • 1 Tablespoon honey
  • ½ teaspoon dijon mustard
  • ¼ teaspoon kosher salt
  • teaspoon freshly ground black pepper

Salad

  • 8 cups fresh romaine lettuce washed and chopped
  • 3 oranges peeled and sliced
  • 1 large pomegranate
  • ½ cup crumbled feta cheese
  • ½ cup chopped [candied almonds]
  • 1 avocado sliced (optional)

Instructions

  • Combine the olive oil, vinegar, orange juice, orange zest, honey, dijon mustard, salt, and pepper in a shaker jar or bowl. Shake or whisk together, then place in the fridge to chill until you are ready to serve.
  • Assemble the salad by combining the romaine lettuce, oranges, pomegranate seeds, feta cheese, chopped almonds, and sliced avocado in a large bowl. Drizzle with half of the dressing and toss to coat, then serve with the remaining dressing on the side.
