Prime Rib Roast with Horseradish Sauce

What You'll Need:

Prime rib roast Rub Olive Oil Coarse Kosher Salt Freshly Ground Black Pepper Garlic Cloves Fresh Rosemary Fresh Thyme Dijon Mustard Horseradish Sauce Sour Cream Heavy Cream Mayonnaise Prepared Horseradish Kosher Salt Chopped Chives

Unwrap the roast and cut off any undesirable pieces then take note of the weight for the next day. Let it sit uncovered in the fridge the night before you plan to make it.

About 2 hours before cooking, pull the roast out of the fridge and let it sit out on the counter at room temperature.
