Texas Cowboy Caviar

What You'll Need:

Black Beans Black-Eyed Peas or Pinto Beans Frozen Corn Roma Tomatoes Jalapeno Pepper Red Bell Pepper Red Onion Cilantro Avocados Green Onions Olive Oil Fresh Lime Juice Red Wine Vinegar Garlic Cloves Kosher Salt Granulated Sugar Black Pepper Ground Cumin (optional)

Combine black beans, black-eyed peas, corn, tomatoes, jalapeno, bell pepper, red onion, cilantro, avocado, and green onion in a large bowl.

In a separate bowl, whisk together olive oil, lime juice, vinegar, garlic, salt, sugar, black pepper, and ground cumin. Pour dressing over the other ingredients.

Gently toss everything to combine. Taste and adjust salt and lime juice as needed.

This recipe makes about 6 cups, or twelve ½ cup servings. You can easily double or triple this recipe for a larger crowd or for larger portions if you like.

Store this salad dip in an airtight container in the refrigerator for up to 2 days.

Enjoy on its own as a dip with plenty of tortilla chips, as a side salad, or toss it with some chopped greens and serve it with chicken as a main dish.
