Easy Caramel Pecan Monkey Bread Recipe

Ingredients

  • 18-20 Rhodes frozen dinner rolls
  • 1 (3-ounce) package butterscotch cook & serve pudding (not instant)
  • ¾ cup light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ cup salted butter, melted
  • 1 cup pecans, coarsely chopped

Instructions

  • Spray a large bundt cake pan with cooking spray. Sprinkle chopped pecans around the bottom of the pan.
  • Arrange frozen rolls on top of the pecans.
  • Combine cinnamon, brown sugar, and the pudding mix in a small bowl. Sprinkle the cinnamon sugar pudding mixture over the rolls. Melt the ½ cup butter, and drizzle over the bread dough, distributing it as evenly as possible. Cover loosely with plastic wrap and allow the rolls to rise for 6-8 hours or overnight.
  • Preheat oven to 375 degrees F. Remove plastic wrap and loosely tent the rolls with foil. Bake for 30 to 35 minutes. The foil can be removed during the last few minutes of baking if desired.
  • Slide a knife around the edges of the bundt pan to loosen the rolls, then top the pan with a large serving plate. Use hot pads to carefully and quickly invert the rolls so they slide out onto your serving plate. The caramel pecan mixture should ooze out down the sides of the rolls. Serve warm and pull apart into individual portions.

Storage & Make Ahead
  • Make Ahead: Assemble the bread and let it rise for 6-8 hours or overnight. Bake when you are ready to have it.
  • Store: Store any leftovers in an airtight container at room temperature. The Pull-Apart Bread should keep well for 3-4 days.
  • Freeze: Freeze the pull-apart bread for up to a month by wrapping it securely in plastic wrap and then in aluminum foil and storing in the freezer. To serve, thaw it at room temperature and then reheat it in the oven at 350°F for about 10 minutes for the best flavor and texture.
