Easy Peach Turnovers

Ingredients

Turnovers

  • 2 sheets puff pastry thawed according to package directions
  • 2 large fresh peaches peeled, pitted, and diced (about 1 ½ cups)
  • ¼ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • ½ teaspoon ground cinnamon
  • teaspoon ground cloves
  • Pinch of salt
  • 1 large egg for an egg wash

Optional Glaze

  • ½ cup powdered sugar
  • 1 tablespoon salted butter melted
  • 2-3 teaspoons milk

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper.
  • Combine peaches, brown sugar, lemon juice, cornstarch, cinnamon, cloves, and salt in a bowl.

  • Roll out a sheet of puff pastry into an 11-inch square.

  • Cut into four equal-sized squares.
  • Spoon ⅛ of the peach mixture onto one half of each square.
  • Whisk egg, and brush over edges of pastry dough.

  • Fold dough over from corner to corner, and press with a fork to seal.
  • Repeat with the second sheet of puff pastry.
  • Brush tops of turnovers with remaining eggs.
  • Place on a cookie sheet, and bake in preheated oven for about 20 minutes until golden brown.
  • When turnovers are finished baking, whisk powdered sugar, melted butter, and milk together and drizzle over turnovers. Let cool for at least 15 minutes before serving.

Storage & Make Ahead

  • Store: Keep turnovers in an airtight container at room temperature for up to two days.
  • Freeze: Freeze baked turnovers on a baking sheet, then transfer to a freezer bag. Store for up to two months.
  • Reheat: Reheat in a preheated oven at 350°F for 10-15 minutes until warmed through.
  • Make Ahead: Assemble turnovers and refrigerate them unbaked for up to 24 hours. Bake when ready to serve.
