Hawaiian Haystacks

Creamy chicken sauce over rice topped with pineapple, chow mein noodles, cheese, and all your favorites. Ready in 25 minutes!

Ingredients

Sauce

  • 4 Tablespoons salted butter
  • ½ cup diced onion (about 1/2 medium onion)
  • 6 Tablespoons all-purpose flour
  • 2 cloves garlic minced
  • 1 cup chicken broth
  • 2 cups milk
  • 1 teaspoon chicken bouillon base
  • ½ teaspoon kosher salt
  • ½ teaspoon celery salt
  • ¼ teaspoon freshly ground black pepper
  • 3 cups cooked and shredded chicken

For serving

  • Steamed rice
  • Chow mein noodles
  • Pineapple tidbits
  • Mandarin oranges
  • Sliced green onions
  • Shredded cheddar cheese
  • Sliced olives
  • Frozen peas (thawed)
  • Diced celery
  • Diced red bell pepper
  • Cashews, slivered almonds, or chopped peanuts
  • Coconut flakes
  • Diced tomatoes
  • Chopped fresh parsley or cilantro

Instructions

  • In a large sauce pan melt the butter over medium heat. Add the onion and sauté until the onion is softened, about 4-5 minutes.

  • Add the flour and garlic and sauté for an additional minute or 2.
    6 Tablespoons all-purpose flour, 2 cloves garlic
  • Slowly pour in the broth until combined followed by the milk. Once the mixture is whisked together, add the bouillon base, salt, celery salt, and pepper. Whisk frequently until the mixture has reached a simmer and has thickened. Add the chicken and stir to combine. Heat until the chicken is warm.

  • Serve over rice with your desired toppings.

Notes

Storage & Freezing
  • Store: Sauce and rice separately in airtight containers in the fridge for 3–4 days.
  • Freeze: Up to 3 months (texture may be slightly grainy). Thaw overnight in fridge.
  • Reheat: Gently on the stovetop with a splash of milk.
