- 2 cups granulated sugar
- ½ cup cornstarch
- ¼ teaspoon salt
- 6 large egg yolks
- Zest of 2 lemons (about 2 Tablespoons)
- 1 cup lemon juice
- 4 cups water
- ¼ cup salted butter
- Homemade whipped cream for serving
Whisk together sugar, cornstarch, and salt in a medium saucepan.

Whisk in lemon zest, lemon juice, and egg yolks until combined. Whisk in the water, then cook over medium heat for 5-7 minutes, stirring frequently, until thickened and starting to bubble.

Remove the lemon pudding from the heat and stir in the butter until melted and combined.

Pour the lemon pudding through a fine mesh strainer over a bowl, pressing it through with a rubber spatula to separate out any bits of lemon zest. Cover the surface of the pudding with plastic wrap to prevent a skin from forming and cool before enjoying with whipped cream. We like to eat it warm best. Or chill the pudding in the fridge until ready to serve.
