Lobster Mac & Cheese

Ingredients

  • 1 lb elbow macaroni
  • 2 fresh lobster tails chopped
  • 2 Tablespoons olive oil
  • 2 Tablespoons salted butter divided
  • 1 teaspoon minced garlic
  • ¼ cup diced onion
  • 4 cups heavy cream
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon Cajun seasoning (such as Slap Ya Mama) or creole seasoning
  • 2 cups shredded mozzarella cheese divided
  • 2 cups sharp cheddar cheese divided
  • 12 ounces bacon cooked and crumbled
  • ¼ cup Panko breadcrumbs
  • Salt and pepper to taste

Instructions

  • Cook the elbow macaroni in water according to the package instructions for al dente pasta. Drain and set it aside.

  • In a large saucepan, cook the bacon until it becomes crispy. Remove, drain the excess oil, and set it aside.

  • In the same large saucepan, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until fragrant and translucent (about 2-3 minutes). Add the lobster meat and sauté for an additional 1-2 minutes. Remove from heat and set aside.

  • In the same saucepan, add butter and let it melt. Gradually pour in the heavy cream, cooking on medium-low heat for 3-4 minutes until slightly thickened.

  • Add the onion powder, garlic powder, smoked paprika, Cajun seasoning, and salt to taste. Stir and taste to adjust the seasoning.

  • Stir in 2 cups of the shredded mozzarella and cheddar cheese mixture. Continue stirring until the cheese is fully melted and the sauce becomes smooth and creamy.

  • Add the cooked macaroni to the cheese sauce. Stir until everything is evenly combined.
  • Preheat your oven to 350°F (175°C). Pour half of the macaroni mixture into an 8x8 casserole dish. Sprinkle 1 cup of the mozzarella and cheddar cheese mixture over the top. Add the remaining macaroni mixture, then top with the final 1 cup of cheese.
  • Evenly sprinkle the crumbled bacon and panko breadcrumbs over the top of the casserole.

  • Bake in the preheated oven for 20 minutes or until the top is golden brown and bubbly. If you prefer a crispier top, broil for 1-2 minutes at the end.
  • Remove the casserole from the oven and let it sit for 5 minutes before serving. Enjoy this luxurious and creamy baked lobster mac and cheese, perfect as a main course or an elegant side dish.

Notes

Storage & Make Ahead

  • Store: Transfer leftover Lobster Mac and Cheese into an airtight container and refrigerate for up to three days to keep it fresh.
  • Freeze: For longer storage, freeze portions in a freezer-safe container for up to two months. Thaw in the fridge overnight before reheating.
  • Reheat: To reheat, cover the dish with foil and warm in a 350°F oven for about 20 minutes, or use the microwave in 1-minute intervals, stirring in between.
