  • 1/2 avocado, cubed (optional)
  • 1/2 cup feta cheese

Vinaigrette

  • 1/3 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 Tablespoons honey
  • 1 teaspoon dijon mustard

Instructions

  • Grill corn on a hot grill for 8-10 minutes until lightly charred, turning occasionally with long tongs. Remove and slice the kernels off the cobs.
2-3 ears of corn,, 1 Tablespoon vegetable or canola oil
  • Fill a large salad bowl with the torn butter lettuce. Add the cucumber, green onions, basil, mint, and avocado. Give everything a toss, then scatter the grilled corn, strawberries, and feta cheese on top.
2-3 heads red leaf butter lettuce,, 1-2 cups strawberries,, 1 English cucumber,, 1/2 cup feta cheese, 4 green onions,, 1/2 avocado,, 1/2 cup fresh basil,, 1 handful fresh mint leaves,
  • Add dressing ingredients to a small bowl or mason jar. Whisk vigorously until fully combined. Drizzle the dressing over the salad, gently lifting some of the salad with tongs or serving utensils, but not tossing the whole salad so you can still see plenty of the corn, strawberries, and feta. Serve immediately.

Notes

  • Variations: Add 2 ounces goat cheese instead of feta cheese, add 1/2 cup blueberries or blackberries.
