Strawberry Spinach Salad

Ingredients

Salad

  • 6 ounces spinach
  • 1 cup sliced strawberries
  • 2 large avocados sliced
  • 1/2 small red onion sliced
  • 1/2 cup sliced almonds
  • 1/2 cup feta cheese

Creamy Poppy Seed Dressing

  • 1/3 cup mayo
  • 1/4 cup milk
  • 3 Tablespoons granulated sugar
  • 1 1/2 Tablespoons apple cider vinegar
  • 2 teaspoons poppy seeds
  • Pinch of salt and pepper

Instructions

  • Combine dressing ingredients in a bowl and whisk together. Combine salad ingredients in a bowl.
    6 ounces spinach, 1 cup sliced strawberries, 2 large avocados, 1/2 small red onion, 1/2 cup sliced almonds, 1/2 cup feta cheese, 1/3 cup mayo, 1/4 cup milk, 3 Tablespoons granulated sugar, 1 1/2 Tablespoons apple cider vinegar, 2 teaspoons poppy seeds, Pinch of salt and pepper
  • Toss with as much of the dressing as you like just before serving.
