Preheat your oven to medium heat (about 425°F). Use store-bought dough or make your own pizza dough with my homemade pizza dough recipe. Divide the dough into 2 or 3 balls, depending on the desired size of your pizzas. Roll out the dough thinly and transfer it to a baking sheet or pizza stone.
My Homemade Pizza Dough Recipe
In a small bowl, whisk together the peanut butter, hoisin sauce, rice vinegar, crushed red pepper flakes, ginger, brown sugar, sesame oil, garlic, and water.
½ cup peanut butter, ½ cup hoisin sauce, 2 teaspoons rice vinegar, ½ teaspoon crushed red pepper flakes, 1 tablespoon freshly grated ginger, 2 tablespoons brown sugar, 2 tablespoons sesame oil, 2 cloves garlic, 2-3 tablespoons water
Use ¼ cup of the sauce as a base for each pizza, and toss the cooked chicken with the remaining sauce. Sprinkle ¾ cup of mozzarella cheese on each pizza crust.

Distribute the chicken and sliced red onions over the pizza, and top with the remaining ¼ cup of cheese.

Bake the pizza for 10-15 minutes until the cheese is melted and bubbly and the crust begins to turn golden brown.
Remove from the oven and sprinkle with bean sprouts, shredded carrots, and chopped cilantro before serving. Add chopped, dry roasted peanuts for an extra crunch.
