To make strawberry stars: cut off the stems and slice each strawberry from the top down, about 1 centimeter thick. Use a 1-inch star cookie cutter to punch out a star shape from each slice and set it aside. Repeat for all the strawberries.
In a measuring cup with a spout, combine the yogurt, heavy whipping cream, maple syrup, and strawberry extract.
Place strawberry stars and blueberries in the popsicle mold. Pour in the yogurt mixture halfway, then add more berries and repeat until full. Place a popsicle stick in the center of each popsicle and freeze for 3 hours or until firm and frozen.
I make the popsicles with about 4-5 strawberry stars and 4-5 blueberries. But you are free to use as many as you like!
With a creamy yogurt filling, they have loads of fresh blueberries in them with star-shaped strawberries for some extra patriotic fun!
