Summertime for us means Memorial Day BBQs and 4th of July celebrations! We love spending time with family and friends outdoors on a hot summer day.

That is, until it gets too hot and we have to retreat into the cool indoors.

Summertime has an energy and vibrancy to it, and so should our menus!

These Red, White, and Blue Patriotic Popsicles are colorful, easy to make, and they're such a hit with adults and children alike.

With a creamy yogurt filling, they have loads of fresh blueberries in them with star-shaped strawberries for some extra patriotic fun!

They're perfect for celebrating the 4th of July, Memorial Day, or to have at any BBQs or kids' birthday parties during the summertime.

Ingredients

  • Yogurt - I used Stonyfield plain whole milk yogurt, and I LOVE it! Stoneyfield has a plain, 0% fat Greek yogurt option as well.
  • Heavy Cream - This can be replaced with any milk. I tested an almond-coconut milk blend, and it had a great flavor! But the heavy cream popsicles had a smoother texture and fewer shards of ice, which was easier on the tongue.
  • Pure Maple Syrup - You can use honey too! I found that the honey added a subtle honey flavor, while the maple syrup seemed sweeter and did not add as much flavor. I preferred the maple syrup when using an extract.
  • Strawberries - Use large, ripe strawberries for the best results.
  • Blueberries - Fresh blueberries of any size will be great in these popsicles to add a punch of blue color and blueberry flavor.
  • Strawberry Extract - This adds more strawberry flavor than you will get just from the strawberry slices to flavor the whole popsicle.

Equipment

  • Small Bowl or Measuring Cup with Spout - This makes pouring the yogurt mixture into the popsicle mold much easier!
  • Star-Shaped Cookie Cutters - I used these ones here! There are 3 different sizes: 1.6-inch, 1.3-inch, and 1-inch. I only used the 1-inch cutter for this recipe, but depending on the size of your strawberries and popsicles, you could use bigger ones too! Metal cutters work best for a clean cut and it's a great set to have for cutting out shapes and decorating the tops of pies with fun crusts as well.
  • Popsicle Mold - I used this silicone one here! You can also use small plastic or paper cups as popsicle molds. It was easy to get the popsicles out of this silicone mold and I like the shape of the popsicles.
  • Popsicle Sticks - Wooden popsicle sticks work great, are inexpensive, and easily available at craft stores or online.

How to Make Red, White, and Blue Popsicles

  1. Make strawberry stars. Cut off the stems and slice each strawberry from the top down, about 1 centimeter thick. Use a 1-inch star cookie cutter to punch out a star shape from each slice and set it aside. Repeat for all the strawberries. You can freeze the strawberry scraps for throwing into a smoothie!

  1. Make yogurt base. In a measuring cup with a spout, combine yogurt, heavy whipping cream, maple syrup, and strawberry extract. Stir it with a spoon to mix.
  2. Assemble popsicles and freeze. Place the strawberry stars and blueberries in the popsicle mold.

Pro Tip: Stick strawberries to the side of the mold so they will be visible. If the blueberries are large, place them on the sides and avoid placing them in the center of the popsicle so that the popsicle stick doesn’t push them down.

Pour in the yogurt mixture halfway, then add more berries and repeat until full so there is fruit suspended throughout the popsicle. I used a little less than ⅓ cup of yogurt mixture for each popsicle. Place a popsicle stick in the center of each popsicle, leaving a little space from the bottom, then place in the freezer and allow to freeze for 3 hours or until firm and frozen.

How do I use fruit scraps from star cutouts?

How do I store Patriotic Popsicles?

Remove the frozen popsicles from the mold and place them in an airtight freezer-safe container or Ziploc bag. Store in the freezer for up to one month.

Tips for Success

  • To help encourage the popsicles out of their mold, you can run warm water over the outside bottoms of the mold. If using a silicone mold, you can push on the bottom while pulling up on the popsicle stick to help get them out.
  • Each popsicle had about 4-5 strawberry stars and 4-5 blueberries. But you are free to use as many as you like!
  • Keep the popsicles in the freezer until you are almost ready to serve. If you want to pull these out for a party, a great idea is to fill a serving plate or platter with ice cubes, unmold the popsicles and arrange them on the plate, then keep them stored in the freezer ready to go until just before serving. The ice won't prevent them from melting on the table at room temperature, but it will slow things down a bit.

Substitutions and Variations

  • Swap heavy whipping cream for milk with a lower fat content, such as almond milk or coconut milk.
  • Use honey instead of maple syrup if you have it instead, for an added honey flavor.
  • The strawberry extract can be swapped for vanilla extract, citrus extract, coconut extract, or any other flavor of extract. You can also add a tablespoon of fresh lemon juice or fresh lime juice and zest for a slight citrus twist.
  • Make a separate strawberry and blueberry puree, then mix each with a small amount of the yogurt mixture. Make a red strawberry layer, a blue blueberry layer, and the yogurt mixture for a white layer to make layered patriotic popsicles! You could use Raspberry Coulis for the red layer too.
  • If you're making these out of berry season, or just don't want berries in it, you could color the yogurt mixture with drops of blue food coloring and red food coloring to make layers too.
  • Instead of fresh berries, you could puree blueberries and/or strawberries and use a star-shaped ice cube tray to freeze them. Then, add them to a yogurt base in the popsicle molds. You could invert the colors, and freeze the yogurt mixture to add to a pureed fruit base for white stars as well.
  • Make these vegan by using vegan yogurt and coconut cream in place of regular yogurt and heavy cream.
