Patriotic Popsicles

These Easy Patriotic Popsicles are a classic all-American, fruit-filled dessert that's perfect for your 4th of July celebrations! Made with your favorite flavors of summer, they're full of fresh strawberries and fresh blueberries!

Ingredients

  • 6-8 large strawberries
  • ½ cup blueberries
  • 1 cup plain yogurt
  • ½ cup heavy whipping cream
  • ¼ cup maple syrup
  • ½ teaspoon strawberry extract (optional)

Instructions

  • To make strawberry stars: cut off the stems and slice each strawberry from the top down, about 1 centimeter thick. Use a 1-inch star cookie cutter to punch out a star shape from each slice and set it aside. Repeat for all the strawberries.
  • In a measuring cup with a spout, combine the yogurt, heavy whipping cream, maple syrup, and strawberry extract.
  • Place strawberry stars and blueberries in the popsicle mold. (Tip: stick strawberries to the side of the mold so they will be visible.) If the blueberries are large, place them on the sides and avoid placing them in the center of the popsicle so that the popsicle stick doesn’t push them down). Pour in the yogurt mixture halfway, then add more berries and repeat until full (I used a little less than ⅓ cup of yogurt mixture for each popsicle).
  • Place a popsicle stick in the center of each popsicle, leaving a little space from the bottom, then place in the freezer and allow to freeze for 3 hours or until firm and frozen.

Notes

  • To help encourage the popsicles out of their mold, you can run warm water over the outside bottoms of the mold. If using a silicone mold, you can push on the bottom while pulling up on the popsicle stick to help get them out.
  • Each popsicle had about 4-5 strawberry stars and 4-5 blueberries. But you are free to use as many as you prefer!
  • Storage: The popsicles can be stored in their molds or you can remove frozen popsicles from the mold and place them in an airtight freezer-safe container or Zip-loc bag. Store in the freezer for up to one month.
