Apple Ginger Quick Bread

Ingredients

  • 2 cups (282g) all-purpose flour
  • 2 teaspoons ground ginger
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup (150g) light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon pure vanilla extract
  • 1 cup peeled, chopped apple

Instructions

  • Preheat the oven to 350°F. Spray an 8 X 4-inch loaf pan with baking spray or line with parchment paper. Set aside.
  • Whisk flour, baking powder, baking soda, salt, ginger, and cinnamon in a large bowl.

  • Whisk together brown sugar, oil, eggs, milk, applesauce, and vanilla extract in a separate bowl.
    3/4 cup (150g) light brown sugar, 1/2 cup vegetable oil, 2 large eggs, 1/2 cup milk, 1/2 cup unsweetened applesauce, 1 teaspoon pure vanilla extract
  • Add wet ingredients to dry ingredients. Stir just until combined. It’s okay for some streaks of flour to remain.
  • Gently stir in the chopped apple. Spread the batter into the prepared pan.

  • Bake for 60-65 minutes until a skewer inserted into the center of the loaf comes out clean.
