Preheat the oven to 350°F. Spray an 8 X 4-inch loaf pan with baking spray or line with parchment paper. Set aside.
Whisk flour, baking powder, baking soda, salt, ginger, and cinnamon in a large bowl.
2 cups (282g) all-purpose flour, 1 1/2 teaspoons baking powder, 1 teaspoon salt, 1/2 teaspoon baking soda, 2 teaspoons ground ginger, 1/2 teaspoon ground cinnamon
Whisk together brown sugar, oil, eggs, milk, applesauce, and vanilla extract in a separate bowl.
3/4 cup (150g) light brown sugar, 1/2 cup vegetable oil, 2 large eggs, 1/2 cup milk, 1/2 cup unsweetened applesauce, 1 teaspoon pure vanilla extract
Add wet ingredients to dry ingredients. Stir just until combined. It’s okay for some streaks of flour to remain.
Gently stir in the chopped apple. Spread the batter into the prepared pan.

Bake for 60-65 minutes until a skewer inserted into the center of the loaf comes out clean.
