Ingredients

  • 1 double pie crust (recipe)
  • 1 cup pumpkin puree
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup brown sugar
  • turbinado sugar for sprinkling
  • 1 egg for egg wash

Instructions

  • Preheat your air fryer to 350°F (180°C).
  • In a mixing bowl, combine the pumpkin puree, 1 teaspoon ground ginger, ½ teaspoon ground cloves, 1 teaspoon ground cinnamon, and ½ teaspoon ground nutmeg and ½ cup of sugar. Mix well to create the pumpkin filling.
  • Roll out your pie dough and use a circular cutter to cut out rounds of dough for the pasties. Spoon a small amount of the pumpkin filling onto one half of each dough round, leaving space around the edges.
  • Fold the dough over the filling to create a half-moon shape and crimp the edges with a fork to seal. Then use a knife to carve the Harry Potter lightning shape mark on them.
  • Beat the egg in a small bowl and brush the tops of each pasty with the egg wash.
  • Sprinkle blonde sugar over the pasties for a touch of sweetness.
  • Place the pasties in the air fryer basket in a single layer, making sure they are not touching each other.
  • Air fry the pasties at 350°F (180°C) for about 12-15 minutes or until they are golden brown and crispy.
  • Once done, remove the pasties from the air fryer and let them cool slightly before serving.

Storage & Make Ahead

  • Store: Pop leftover pasties in an airtight container in the fridge for up to 3 days.
  • Freeze: Freeze the unbaked pasties on a baking sheet until firm, then move them to a freezer-safe bag. When you’re ready to cook them, just add a few extra minutes to the cooking time.
  • Reheat: Give refrigerated pasties a few minutes in the air fryer or oven until they’re hot and crispy again.
  • Make Ahead: Mix the filling a day ahead and keep it covered in the fridge, so all you have to do on the day is roll, fill, and air fry. You can also assemble the pasties ahead of time and freeze them unbaked.
