My husband, Paul, loves my sour cream coffee cake so much that he has requested it as his birthday cake some years. So obviously I needed to make a pumpkin version for fall months!

How to Make Pumpkin Coffee Cake

  2. Make the crumb topping. In a medium bowl, whisk together the flour, brown sugar, granulated sugar, and cinnamon. Add the melted butter and stir until the mixture forms large, clumpy crumbs. Set aside in the fridge while you mix the batter.
  1. Mix the dry ingredients. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  2. Combine wet and dry. In a separate bowl, combine the melted butter, oil, pumpkin puree, eggs, milk, and vanilla extract until smooth. Pour the wet ingredients into the bowl of dry ingredients and stir by hand just until everything is combined and no streaks of flour remain.

  1. Assemble the cake. Spread the batter evenly into the prepared pan. Take the chilled streusel topping and scatter it evenly over the batter.

Recipe FAQ’s

Can I use pumpkin pie filling instead of pumpkin puree?

Nope. Pumpkin pie filling has added sugar and spices, which will throw off the flavor and texture of the cake, so make sure to use canned pumpkin puree or homemade pumpkin puree.

Why did my pumpkin coffee cake turn out dry?

This usually comes down to overbaking or mismeasuring flour. Be sure to pull the cake out of the oven when a tester comes out with just a few moist crumbs. If it is coming completely clean, chances are it has overbaked a bit.

Why did my streusel topping sink into the cake?

If the batter is too thin or the streusel isn’t chilled, it can sink as the cake bakes. Letting the topping firm up in the fridge before sprinkling helps it stay put.

  • In a separate bowl, whisk together the butter, oil, pumpkin, eggs, milk, and vanilla.

  • Add the wet ingredients to the dry ingredients, mixing by hand until just combined and no streaks of flour remain. Pour the batter into the prepared pan. Sprinkle the crumb mixture evenly over the top of the cake.
  • Bake for 30-35 minutes or until a tester inserted into the cake comes out with just a few crumbs clinging to it. Do not overbake. Let cool.
  • Once the cake has cooled, whisk together the powdered sugar, cream, and vanilla in a small bowl. Drizzle over the top of the cake and serve warm or at room temperature.

Notes

  • Storage: Store in an airtight container on the counter at room temperature for 5-7 days.
  • Freezing: This coffee cake freezes well for up to 2 months. I recommend flash freezing individual pieces, then wrapping them with plastic wrap and transferring to a freezer-safe container for longer term storage. 
  • Pumpkin Spice: If you want to use a jar of pumpkin pie spice instead of the various spices listed above, I recommend replacing them with 1 Tablespoon of pumpkin spice + 1 teaspoon of ground cinnamon.
