What You’ll Need
Scroll down to the recipe card below this post for ingredient quantities and full instructions.
- Butter – Use salted butter to enhance the flavors. You’ll need some for making scrambled eggs and also as a base for the poppy seed glaze.
- Eggs – To add protein and a delicious eggy, buttery flavor to the sliders.
- Salt & Pepper – Use kosher salt and freshly ground black pepper to enhance all the flavors.
- Rolls – We love using Hawaiian rolls as they add a bit of sweet decadence to these sliders, but any small slider rolls will work well here.
- Ham – The best ham to use for this recipe is thinly sliced deli ham but you can also use any leftover ham.
- Cheese – Use cheddar cheese or American cheese for a classic slider taste, or use another kind of cheese for a different flavor.
How to Make Breakfast Sliders
- Make egg mixture. Add the eggs, salt, pepper, and water to a large bowl and whisk to combine.
- Scramble the eggs. Melt butter in a large, non-stick frying pan over medium-low heat. Pour the egg mixture into the frying pan and scramble the eggs just until they are cooked on the soft side. They should still even look a little wet in spots because nobody wants dry eggs and they will continue to cook a little in the oven. Set aside.
- Slice rolls. Without separating the rolls, cut them in half horizontally with a serrated knife. Place the bottom half of the rolls in the prepared dish. Set the top halves of the buns aside. Place 6 cheese slices in an even layer on top of the bottom buns.
- Add ham layer. Add a layer of ham slices on top of the cheese.
- Add scrambled eggs. Top the ham layer with the scrambled eggs.
- Add cheese layer. Then top with the rest of the cheese. Place the top half of the buns over the cheese and press down slightly.
- Make butter mixture. In a microwave-safe medium bowl, melt the butter. Add the maple syrup, crushed French fried onions, sesame, and poppy seed, and mix well.
- Top rolls with butter glaze. Brush over the tops of the rolls and their sides. Loosely cover with aluminum foil and bake for 15–20 minutes in the preheated oven. Uncover and bake for another 10 minutes, or until the cheese is melted and the rolls are golden brown. Cut between the rolls to serve and enjoy!
Recipe FAQ’s
Of course! We love the sweetness of the original Hawaiian sliders rolls. But regular dinner rolls, savory butter rolls, or even English muffins would work too.
Sure! These may be made the day before, wrapped well in plastic wrap or tightly covered with foil, stored in the refrigerator, and baked the next morning.
As the eggs cook, the water becomes steam and evaporates, creating a fluffier scrambled egg, that’s also moist. You could also use milk in place of the water.
Although the eggs in these sliders will have a bit more baking time once they’ve been layered in the sandwich and transferred to the oven, the eggs are cooked when there is no visible liquid in the skillet when cooking them on the stovetop.
Of course! One of the best things about these little breakfast sandwiches is that you can customize them. Ham and cheese are a great combination without eggs, and with the maple butter topping, they still have a breakfast flavor profile.
Leftover breakfast sliders can be stored in an airtight container once they have cooled to room temperature in the refrigerator for 3–4 days. Reheat individual sliders for about 15–20 seconds in the microwave.
Freezing the sliders is a great way to prep them for a convenient breakfast on busy mornings. Wrap them individually in plastic wrap and place them in a freezer bag. They will keep for 3 months. To reheat a frozen breakfast slider, do not thaw it first. Place in the microwave and heat on high for 30-second intervals until heated through completely.
Tips for Success
- If you opt to use American cheese slices, like the Kraft ones, we found the American cheese from the deli gave us the best results for ooey, gooey, melty cheese. The taste and quality are better.
- This recipe was tested with eight eggs and then ten eggs. Eight will sufficiently fill the buns, but we found that ten eggs provided a thicker layer that just worked a little better.
What can I serve with these breakfast sliders?
Serve your breakfast sliders with some delicious side dishes to make a breakfast spread for a hungry crowd!
- Fresh Fruit slices or Summer Fruit Salad
- Yogurt parfaits
- Homemade Oatmeal
- Hashbrowns or Hashbrown Casserole
- Skillet fries (potatoes)
- Sweet Potato Hash
Substitutions and Variations
- If you prefer a more creamy scrambled egg mixture, replace the water with milk.
- Colby Jack cheese, pepper jack cheese, and monterey jack cheese are some of our other favorite cheese options that would be delicious on these sliders instead of American or cheddar.
- For recipe testing, we used deli ham off the bone. It made layering super easy, and the ham was tender. We do not recommend using ham steak or thickly sliced deli meat, but this would be a great recipe for using any leftover ham from a holiday dinner.
- Try using cooked bacon, sausage patties, sliced Turkey or even chicken if you don’t like ham.
