When I was doing my “These United Desserts” series I had dozens of people from Pennsylvania request it as their state dessert, but I had similar requests from Delaware and Utah as well because it’s such a popular and well-known dessert!

These Strawberry Pretzel Cookies take that same nostalgic sweet-salty-tangy combo and turn it into a fun, portable treat you can grab and go! The magic is in every bite. Think soft buttery cookies packed with salty pretzel crunch, topped with a cool cream cheese filling, and a bright homemade strawberry reduction on top. They’re surprisingly simple to make and taste even better after a little time in the fridge.

How to Make Strawberry Pretzel Cookies

  1. Start cookie dough. In a large bowl, beat the butter, brown sugar, egg, and vanilla for 2-3 minutes until fluffy.
  2. Add dry ingresients and pretzels. Add the flour and baking powder, mixing on low until just combined. Stir in the crushed pretzels.
  1. Shape the cookies. Scoop the dough into 1 to 1½ tablespoon portions onto prepared baking sheets. Use the back of a spoon to press a well into the center of each one.
  2. Bake. Bake at 325°F for 7-9 minutes until lightly golden on the bottoms and just set in the middle. Cool on the baking sheet for at least 5 minutes, then transfer to a wire rack to cool completely.
  1. Make cream cheese filling. Beat the cream cheese and vanilla extract together in a medium bowl until smooth. Add the powdered sugar a quarter cup at a time, beating until creamy. Cover and chill until ready to use.
  2. Prepare strawberry reduction. In a small saucepan, toss together the chopped strawberries, sugar, and lemon juice. Bring to a boil, then reduce to medium heat and cook for 10-15 minutes, stirring occasionally as it bubbles and simmers.
  3. Mash and thicken. Gently mash the strawberries until mostly saucy with some chunks remaining. Lower the heat to medium-low and continue simmering until the juices reduce and the mixture turns a deep ruby red. Remove from heat, cool completely, then cover and chill.
  1. Assemble. Spoon 2-3 teaspoons of cream cheese filling into each cookie well. Top with about 1-2 teaspoons of the strawberry reduction. Garnish with extra pretzel crumbs or whole mini pretzels if desired. Serve and enjoy.

Recipe FAQ’s

Why did my cookies spread too much or turn out flat?

Make sure your butter isn’t too soft and that you’re not over-creaming the dough. You can also add a little extra flour to help them hold their shape better. Using cool baking sheets and room-temperature dough also helps the cookies hold their shape with nice wells for the fillings.

Can I use store-bought strawberry jam instead of making the reduction?

You can, but the homemade reduction has brighter flavor and better consistency. If using jam, thin it with a splash of lemon juice or water if needed.

How long do assembled Strawberry Pretzel Cookies last?

They keep well in an airtight container in the fridge for 2-3 days. The flavors meld nicely when chilled, though the pretzels lose some crunch over time.

Can these cookies be frozen?

Yes, you can freeze the unfilled baked cookies for up to 2 months. The pretzels may soften slightly after thawing, so add the cream cheese filling and strawberry topping fresh.

Can I make these ahead of time?

Yes. Prepare the strawberry reduction, cream cheese filling, and cookie dough up to 2 days ahead and store them separately in the fridge. Bake and assemble the day you plan to serve for the best texture.

Tips for Success

  • DON’T chill the cookie dough! I found that chilling the dough is unnecessary and causes the cookies to be too firm. If you must prepare the dough in advance and need to chill it, just be sure to bring it to room temperature or at least leave it out of the fridge for 30 minutes before scooping. 
  • DO chill the cream cheese mixture. This will help it firm up so that it holds up to the strawberry reduction topping.
  • Chilling the strawberry reduction is optional, but I do recommend allowing it to cool to room temperature at the very least, before topping the cookies.
  • I know it seems odd, but you really do not need to add salt to the cookie dough. There is already enough salt in the pretzels, and adding additional salt would be overkill.
  • I used a food processor (affiliate link) to pulverize my pretzels to the consistency of breadcrumbs. You can make yours slightly more chunky if you prefer.
  • If you don’t have a food processor or blender, you can crush your pretzels by placing them in a sealed zip lock bag and using a rolling pin to roll or whack them on a flat surface until crushed.

Substitutions and Variations

  • No fresh strawberries? A good-quality strawberry jam works in a pinch. Thin it with a little lemon juice if it’s too thick.
  • Swap the strawberry reduction for raspberry or mixed berry using the same method.

Ingredients
  

Quick Strawberry Jam

  • 1 cup chopped strawberries
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon lemon juice

Cream Cheese Layer

  • 4 ounces cream cheese softened
  • 1 teaspoon pure vanilla extract
  • 1 cup (120g) powdered sugar

Dough

  • ½ cup salted butter softened
  • ¾ cup brown sugar
  • 1 large egg room temperature
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (212g) all-purpose flour
  • ½ teaspoon baking powder
  • ¾ cup crushed pretzels
  • Additional whole or crushed mini salted pretzels for garnish

Instructions
 

  • To make the strawberry reduction: In a small sauce pan, toss together the strawberries, sugar, and lemon juice. The strawberries will almost immediately start to release some of their juices. Bring to a boil over medium-high heat, then reduce to a simmer over medium heat.
    1 cup chopped strawberries, ¼ cup (50g) granulated sugar, 1 teaspoon lemon juice
  • Cook for 10-15 minutes, stirring occasionally as it bubbles and simmers so it doesn't scorch on the bottom of the pan. Gently mash the strawberries until the mixture is mostly saucy, but some chunks remain.
  • Reduce the heat again to medium-low, and allow to continue to simmer until the juices are reduced and the mixture is a dark ruby red color.
  • Remove from heat and cool completely. Cover and chill until ready to assemble the cookies.
  • To make the cream cheese filling: In a medium-sized mixing bowl, beat together the cream cheese and vanilla extract. Beat in the powdered sugar about a quarter cup at a time, until the mixture is smooth and creamy. Cover and chill until ready to assemble the cookies.

  • To make the cookie dough base: Preheat the oven to 325℉ (163℃). Line baking sheets with parchment paper.
  • In a large mixing bowl, beat together the butter, brown sugar, egg, and vanilla for 2-3 minutes, until fluffy.
    ½ cup salted butter, ¾ cup brown sugar, 1 large egg, 1 teaspoon pure vanilla extract
  • Add in the flour and baking powder, and beat on low until fully incorporated. Stir in the pretzel crumbs until combined.

  • Scoop the cookie dough into approximately 1-½ tablespoon portions onto prepared baking sheets. Use the back of a spoon to press a well into each cookie dough portion.
  • Bake at 325℉ (163℃) for 7-9 minutes, or until lightly golden on the bottoms and just set in the middle. Allow the cookies to cool on the baking sheet for at least 5 minutes, then transfer to a cooling rack to cool completely.
  • To assemble, spoon 2-3 teaspoons of the cream cheese filling into the well of each pretzel cookie. Spoon about 1-2 teaspoons of the strawberry reduction overtop. If desired, top with additional pretzel crumbs or whole mini pretzels for garnish before serving.
