My husband, Paul’s, favorite fruit desserts always have apples in them, from German apple cake to apple hand pie cookies. So these rich, Caramel Apple Cheesecake Bars were one sweet treat that I knew would disappear instantly in our household (and I was right!).

Inspired by our hugely popular caramel apples and caramel apple pie, this apple cheesecake bars recipe captures the magic with layers of buttery crust, creamy cheesecake, cinnamon-kissed apple filling, and a sweet caramel drizzle—perfect for a dessert recipe you’ll crave all year!

The best part is that they are actually very quick to assemble, 30 minutes is all you need before baking! And since they have a cheesecake layer, they’re perfect for making in advance since they need to chill in the fridge to set. It’s the perfect kind of sweet treat to use up all of those apples after apple picking on a lovely fall day.

How to Make Caramel Apple Cheesecake Bars

  1. Prepare crust mixture. Preheat your oven to 350°F and line a 9×13-inch baking pan with parchment paper. In a medium bowl, combine flour, brown sugar, and salt. Using a pastry cutter (or a fork), cut in the softened butter until the mixture resembles coarse crumbs.
  1. Bake crust. Press this mixture firmly into your prepared pan, creating an even layer. Bake for 10-15 minutes, just until the edges are lightly golden.
  1. Make creamy cheesecake layer. In a large bowl, beat the softened cream cheese and granulated sugar on medium speed with an electric mixer until smooth and creamy. Add eggs one at a time, mixing well after each addition. Add vanilla extract and give it one last mix. Pour this luscious cream cheese mixture over the warm crust, spreading it evenly.
  1. Add apple layer. In another bowl, toss together the diced Granny Smith apples, sugar, cinnamon, and nutmeg. Spoon this spiced apple mixture over the cheesecake layer, spreading it out for an even layer of apple goodness.
  1. Top with streusel. In a separate bowl, mix flour, brown sugar, and cinnamon. Cut in the butter with a pastry cutter until the mixture is crumbly. Sprinkle this crumbly sweet streusel topping evenly over the apple layer.
  1. Bake and cool. Bake for 40-45 minutes, just until the cheesecake layer is set. Allow the bars to cool at room temperature for 2-3 hours, then transfer them to the fridge to chill for at least 4 hours (or overnight if you can resist!).
  2. Make caramel sauce. In a medium saucepan over medium heat, melt the sugar, stirring constantly with a wooden spoon or heatproof spatula. As soon as the sugar is melted, stir in the butter until melted. Slowly drizzle the heavy cream into the caramel while stirring. Let the caramel boil for 1 minute without stirring, then remove from the heat and stir in the vanilla and salt. Allow the caramel sauce to cool before drizzling over the bars. If made ahead, reheat it slightly before using.
  3. Slice, drizzle, serve. Cut the bars, drizzle with the caramel sauce, and serve up the magic!

  • Press the shortbread crust firmly into the pan to create a sturdy base for your bars. This will help the layers hold together beautifully when cut. Cool the crust until its warm, not hot, to pour the cheesecake filling over top.
  • Use tart apples and chop them the same size. Our favorite is Granny Smith for the best balance with the sweet caramel and creamy cheesecake layers. Honeycrisp and Gala also work well. Chopping the pieces the same size allows for even baking of the filling.
  • Chill the bars fully before cutting. This not only helps with neat slices, but also allows the flavors to meld together for an even tastier dessert. For the best results, you’ll want to cool them for 2 to 3 hours at room temperature, then place them into the fridge for another 4 hours.
  • Don’t skip the caramel drizzle! It’s the finishing touch that takes these bars from delicious to absolutely divine. You can easily use your favorite store-bought caramel sauce to make it extra easy.

Freezing works perfectly well too. Wrap each bar in plastic wrap and place in an airtight container to freeze for up to 3 months.

FAQ’s

Do I have to make homemade caramel sauce?

Not at all! If you’re in a pinch, you can use store-bought caramel, like Mrs. Richardson’s Caramel. But if you can spare the time, homemade adds that extra special touch.

Can I use a different type of crust?

Absolutely! While the shortbread crust adds a buttery base, you could also try a graham cracker crust for a hint of honey sweetness. Just press it firmly to keep everything sturdy.

What if I don’t have a pastry cutter?

No worries! A fork or even your fingers can work wonders to blend the butter into the flour for the streusel and crust. Just work quickly so the butter doesn’t get too soft.

Cheesecake Filling

  • 2 (8-ounce) packages cream cheese softened
  • ½ cup (100g) granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoons pure vanilla extract

Apple Filling

  • 3 Granny Smith apples peeled, cored, and diced
  • 2 Tablespoons granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Streusel Topping

  • 1 ½ cups (212g) all-purpose flour
  • 1 cup (200g) brown sugar
  • ½ teaspoon ground cinnamon
  • ½ cup (113g) salted butter softened

Caramel Sauce

  • 1 cup (200g) granulated sugar
  • 4 Tablespoons salted butter
  • ½ cup heavy cream
  • Pinch of salt
  • 2 teaspoons pure vanilla extract

Instructions
 

  • Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper or spray with baking spray.
  • Combine flour, brown sugar, and salt in a medium bowl. Use a pastry cutter to cut in the butter until the mixture resembles coarse crumbs. Press into the prepared 9×13-inch pan. Bake for 10 to 15 minutes or until lightly browned just around the edges.
